A Friday For The Soul

This semester is the first semester that I don’t have classes on a Friday. I’ve been trying to take advantage of this free time to get work done and do things for myself. This past Friday, my roommate Liv and I decided to get our grocery shopping out-of-the-way and then treat ourselves with a hearty lunch and some shopping.

I woke up, made a few eggs for breakfast and got ready for the day. I’m rocking my Paramore tour t-shirt, my favorite Lev’s, and a green button-up!

We hopped in my car and headed to the grocery store, but first things first, we stopped for Dunkin Donuts coffee. Our weekly essentials from the grocery store are the same; bread, eggs, bananas, vegetables, almond milk, and vegan ice cream. After we hit the grocery store, we headed to Northampton. Northampton is one of my favorite cities to go to out here in western MA. It has so many unique shops and restaurants, there’s always something to check out. Today Liv and I had a specific restaurant in mind, Nourish Wellness Cafe. This restaurant serves organic vegetarian dishes and also purchases their food from local farmers!

We started off our meal with ginger wellness shots. These definitely woke us up with their powerful kick. 57236CE8-F9AD-443E-9117-421A0ECAE98B

For our main course, I got the Buddha Bowl and Liv got the Nourish Bowl (pictured below). The Buddha bowl (left) contains brown rice, massaged kale, avocado, purple cabbage, house ginger carrots, pumpkin seeds, pea shoots. The Nourish Bowl (right) has brown rice, beet hummus, avocado, shredded carrots, fermented beets, sprouts, and hemp seeds. The bowls were so hearty and filling, I can’t wait to go back!

We also shared the cheesy-avo toast. This was one of the best things I’ve eaten in a long time. It was thick, crispy bread, smeared with avocado and in-house made cashew “cheese.” The toppings were a perfect ratio to the bread. It was my first time eating cashew cheese, which is just a mixture of pulverized cashews, garlic powder, nutritional yeast, and lemon juice. 2551BBCC-5D5C-4E38-8832-339C4AFC9503

After we finished up our meal, we walked around downtown and went into different vintage shops. It’s always interesting to see what knickknacks each store has. My favorite thing to do in vintage shops is to flip through all the vinyls. I always find ones that remind me of my childhood and the music my mom would play in the car. After looking through a few stores, we decided to head home and relax!

It’s always a blast going out and trying new dishes at new places and making a day out of it!

  1. Totally jealous of those bowls – they are too pretty too eat (almost haha I would’ve gobbled that up!) Also totally inspired to make cashew cheese now!

  2. What a fun day. I love reading about all of these unique foods, which we certainly don’t have here in rural Minnesota. My son, who lives in Somerville, often shares about the interesting places he dines in the greater Boston area.

    Fridays off when you’re a college student are the best.
