A Pancake Tuesday!

Another huge storm blew through Boston, delivering us 6-12 inches of snow! 🙃 I worked on some homework, watched some Netflix, and even played a few video games, but the tastiest part was the pancakes. This pancake recipe dates back to my childhood. My family had a recipe book with all the pages untouched, except for this one. My mom was cleaning the house and decided to get rid of the book, but keep this one page pancake recipe!

As you can see, it’s pretty damaged, but still does the trick! The ingredients and directions are small so I’ll copy there here –F5A34118-04BB-4C1E-A853-E1A753E96E2B

Ingredients :

1/2 – 3/4 cup milk (I used almond milk)
2 tbsp melted butter (I substituted margarine)
1 egg
1 cup flour
2 tsp baking powder
2 tbsp sugar
1/2 tsp salt
(secret ingredient : a dash of cinnamon)

Directions :

  1. Beat the milk, butter, and egg in a mixing bowl. Mix the flour, baking powder, sugar, and salt in another bowl, and then add them to the first mixture.
2. Gently mix the dry and wet ingredients together and then add a dash of cinnamon!
3. Lightly grease a frying pan or griddle, and wait for it to heat up. Then add about 2 tbsp worth of batter onto the pan, or if you want larger pancakes, add 1/4 cup of batter per pancake.

4. Flip pancakes when they begin to bubble on the top, or you see that the undersides are browning. Turn with spatula to brown other side.

5. Place the finished pancakes onto a plate. Garnish with butter, syrup, or whatever else you desire!

It’s always fun to make something homemade when you’re stuck inside for the whole day. The pancakes are light and fluffy, with a hint of cinnamon – you can’t go wrong! This recipe is super easy and you probably already have all the ingredients in you pantry.
